The context February 2005, France adopted the law for equal rights and opportunities, citizenship and participation of people with disabilities. However, the inclusion of children and adolescents with disabilities in mainstream education is progressing only slowly and remains the daily struggle of parents faced with the rigidity of the system. What hope, then, for the training and employment of these young people who are often referred to IME Pro and then to a home, ESAT or, for lack of solutions, must stay living with their parents? Ordinary employment is carried by law but remains rare for people with intellectual and cognitive impairments or mental disorders. The example of "extra-ordinary" restaurants gives life to the ideal of inclusion in the ordinary environment, of people with disabilities. By adjusting the work environment to take into account the specific needs of people with Down's syndrome or, more broadly, cognitive impairment (adapted working hours, rest room, seats to sit in the kitchen, ergonomic plates, system of reimagined order taking .......) these establishments can integrate people often perceived as very far from the requirements of the catering sector. When they are given the means to integrate, these people are no longer people with disabilities and prevented from doing what they want, but ordinary citizens, like others.
